Venison Tartare

I have always wanted to try a hunk of fresh venison tenderloin, ground and eaten raw over rye bread with onion. I have looked on line and not found much in the way of info for the safety of eating raw venison. The steaks I grill sometimes are on the verge of being cooked rare, but never had the nerve to try it raw yet. Anyone ever made it?

Thin sliced raw venison tenderloin is unreal. If you like sashimi, you'll love it....

I recommend if you eat RAW venison to take your tare tare from a whole clean muscle. Do not use trim and ground. Grind your own and use a clean knife and cutting board. Also Venison fat is tallow not good eats!!!
