Duck Brats - only in WI

Decided to empty out the freezer awhile back and go out on a limb with the meat grinder. Chunked up the meat and marinaded for 48 hrs., added spices, and ran it through the course blade on the grinder. Mixed 2 parts seasoned pork sausage with 1 part duck and stuffed it into the casings. Not bad for a first attempt.
