CATFISH RECIPIES

Hey guys, I am hoping some of you will share your favorite ways to cook catfish with me. And also some information on bleeding catfish. Someone told me this was necessary with catfish. Just wondering what you guys had to say, and if so how to do it. Thanks in advance for any info.

I fix them the some as i do walleye only cut in smaller chunks. smaller cats are better tasting for sure. Catfish are the best smokefish you can get IMO.I have 10 in the smokehouse right now be done in 2 hrs.

Hey thanks for the info guys. I will give a couple of these a try. This catfish only weighs a couple of pounds so he hopefully she be a good one.

Blackened recipe-

Place an iron skillet on grill and turn burners up to nuclear setting. Dip fillets in melted butter and cover with Cajun seasoning. Once skillet is smoking hot place fish on the dry skillet and cook about 3 minutes on each side. It will smoke like it is burning but it's not. Just leave it sit in one spot until ready to flip. It should come out a dark brown nearly black color. If it is actually black, black you have taken the blackening process a touch too far. Once done I squirt a little fresh lime juice on top. On a grilled French roll with lettuce, tomato, onion and mayo it is a great sammich.

For catfish tacos I blacken the fish the same as above but use a taco seasoning instead of the Cajun seasoning. Serve with fresh salsa, Monterey jack cheese, avocado and fresh lime juice. On a soft shell.

You really only have to bleed the big ones and I'd say anything over 30lbs. To me the 2lb fish are easier to clean and taste better IMO plus them bigger ones are always good to be able to catch again lol my two cents. butter garlic salt pepper in foil on the grill is good. You can never go wrong with fried catfish milk and i get premade batter cornmeal or flour depends on what I feel like that night. my favorite thou take about a cup or so of regular cheap plain yellow mustard, and then stir in about a tablespoon of Tony Cacheres spicy mix. once I have it mixed up, I usually just dump all the fish in the bowl and mix it all around to cover the fish evenly.

then just roll it in Zatarains (or equivalent) dry fish fry mix, and fry it up.
