What have you smoked lately? Q-view...

Just before Thanksgiving, wanted to smoke some snacks to take to my Mom's....did a Spiral ham, couple pound of mixed nuts, and I usually throw on some red taters just because. I rub a little EVOO on the taters, some seasoning, and pull them out when the main course is done. Sometimes they're not cooked all the way through, but can always be finished off when you decide how you want to cook them. I either chop and fry up, or finish off as a baked tater...red taters cook quicker... Good stuff.

Smoking up some ribs today. Low and slow. I need a new smoker that is electric and has shelves. I always have to improvise with spacers for two racks. Plus it's hard to control it with propane when it's windy like today. Going to be good though.

Smoked up 3 racks of baby back ribs yesterday.

Ate a 1/2 rack for dinner, yum!

Vac pac 5 half racks for future consumption.

Stumbled on a good white bass bite last Friday. Ran them through the smoker yesterday and had 5 racks of fish like this one. As the late afternoon bite turned into evening these other 3 and a few other of their friends also thought my jig and minnow was theirs for the taking.

Fish, I've also noticed my old school weber produces a more smoked flavor than my sons gas smoker. His smoker is much better at controlling temp. But I have used mine for many years and I kind of know how to control it. Guess I'm just an old school kind of guy.

Brand new smoker, Pit Boss I put together this weekend.  I smoked some ribs in it.  I had some difficulties in getting it to the temperature I wanted it and keeping it there.  There are two vents to mess with - the chimney vent and the vent to open it to flame.  Do I keep the vent for the flame closed unless I want flare ups, or does it need to be opened slightly to get to temps of around 350 to 400?  200 degrees, no problem getting it to that, but 300 was difficult until i opened it slightly, but then it went more up to 350 to 375.  Ribs were pretty good, not much smoke flavor at least not as much as I expected.  My charcoal grill smoker gave ribs way more smoke flavor.

Edge.
Cheese needs to be cold smoked. Cool springtime Temps the best. 70 degrees is too warm..Any heat, your Cheese will melt. I smoke indirect with a pellet maze. This time i tried Pecan pellets. It only takes 2-3 hours, then vacuum wrap and put in the fridge at least a month to let the smoke work through. 
It's cheap and fun to do. I give alot away. Everyone really loves it!

Edge........No temp, just smoke.
I usually do four hours.
This is a cold weather affair as well.

Then into foodsaver bags to mellow for at least a ​month or two.

It is extremely jaded if you try it right off of the smoker
