Apple Goose

Ingredients:

• 1 wild goose
• 2 apples
• 1 can applesauce
• 3/4 cup currant jelly
• 1 teaspoon cinnamon
• 1 teaspoon nutmeg
• 1/2 cup corn syrup

Directions:

Soak goose overnight in salt water. Place 2 apples, pealed and sliced, in cavity. Bake in oven at 350 degrees for 20 to 25 minutes per pound. While baking, baste frequently with a sauce made by heating together applesauce, jelly, cinnamon, syrup and nutmeg. Serve this sauce as a gravy separately or over carved bird.
