Squirrel legs: 8 oz sliced bacon,16 meaty squirrel legs,salt/pepper to taste,1/2 cup flour,1/2 cup corn starch, 2 eggs, 2 tbls milk, 1 cup thinly sliced onion, 2 tbl garlic minced,1 cup chicken stock,1 bay leaf, 1 teasp fresh thyme minced. 1. Cook bacon in a skillet until crispy; drain on paper towel, cool and crumble; set aside. Reserve grease in skillet. 2. While bacon is cooking, season squirrel with salt/pepper, set aside. In a resealable bag, mix together flour and cornstarch. Whisk together eggs and milk until smooth. Dredge the squirrel in the flour mixture, shake off excess, then dip into eggs, shaking off excess then dip again into flour, set aside.3.Pur all but 2 tbls of bacon fat from the skillet,and place over medium-high heat. When the fat is hot, cook squirrel pieces until golden brown, 3 to 4 mins per side, set aside. 4. Turn down the heat to medium, add the onions, garlic and cook until soft. Pour in the chicken stock, and add the bay leaf and thyme. Add the squirrel and return to a simmer, cover, Cook until very tender, about 30 mins. remove sqiurrel to platter sprinkle with bacon and serve... enjoy

Wow. Why make cooking so complicated. I've made mistakes cooking game and it usually started with a dry cooking method like grilling or smoking. The easiest way is to toss the whole carcass in with some rice, onions, and salted water in a covered roasting pan. Bake at 350 degrees for no less than 45 min. with the cover on. The meat will come off the bone, no problem. It tastes great and God doesn't like it when we waste his natural resources! I've started moist precooking venison in my pressure cooker the same way I used to do a big batch of rabbits when I raised them. But that's for another thread.

Bleu cheese rodent. Parboil quartered squirrels for an hour. Place in a large bowl and cover with bleu cheese salad dressing. Cover and let sit in fridge overnight. Rinse off dressing and shake in a bag of shore lunch. Brown rodent parts in butter. Tried this on a whim and was pleasantly surprised.

Redneck Squirrel Fry
~ squirrel legs, amount depends on how many you have or how hungry you are. ~ 2 eggs ~ 1 tbsp ketchup ~ salt and pepper ~ 1 can beer ~ Drakes batter ~ butter
Beat the eggs in a medium bowl. Add the ketchup. Salt and pepper to taste
Add 1/2 can of beer and drink the rest. (you don’t want to waste it!) Mix well.
Put some of the Drakes batter in a shallow dish.
Melt several tablespoons of butter in a skillet over medium-low heat.
Dip the squirrel into the egg mixture and then roll in the Drakes. Repeat for thicker coating.
Add to the skillet and cook until golden brown. Turn as needed.
Serve with mashed potatoes and cream corn.
Enjoy.

Squirrel Nuggets Sent in by Domenick Ottoviani.
~ squirrels, amount depends how hungry you are ~ 1 large onion, chopped ~ couple stalks celery, chopped ~ 1 - 2 carrots, chopped ~ peppercorns ~ water, beer or chicken stock ~ flour ~ paprika ~ beer
Clean and quarter squirrels. Add to a large soup pot. Cover with water, beer or chicken stock.
Add the onion, celery, carrots and peppercorns to taste.
Bring to a boil, reduce heat and simmer until meat is tender.
Remove meat from pot and cool. Remove bones. Keep the meat in nugget size pieces.
In a bowl, mix some flour and beer together to a "gravy consistency". Season to taste with paprika.
Dip the nuggets into the batter and deep fry to a golden brown.
Serve with ketchup, ranch dressing or homemade plum jam for dipping.
Enjoy.
* Domenick says the favorite dipping sauce at their camp is the homemade plum jam.

My grandma use to fry and then bake squirrel but the best part was the gravy she made from them. Best gravy in the world you could pour that stuff over a cow pie and it would be good.

I can only guess. The smoked squirrel would rate the same as duck jerky. My dog wouldn't even eat it. Otherwise nice ways of prepairing them. I like battered and fried but will try other ways. Gumbo ?

I don't have a specific recipe but I've had squirrel jambalya. It was awesome! I suppose you could just get a box of Tony Chachere's Jambalya mix at the store and add squirrel instead or in addition to the other traditional meats.

Neighbor brought me a squirrel and rabbit that he had smoked ,,,,,,,,,, Not too good , either of them . Pretty bad actually . As far as how I like squirrel ,,,,,,,, just like Glenn and Mitchell ( swamp people ) like it . Daddy's squirrel n' dumplins ,,,,,,, hahahahaaa
