smoked duck or snow goose

my nephew made this and it was very GOOD!
brine:
1 qt apple juice
2 T salt
2 t thyme
2 lg garlic cloves minced
1 T ground blk pepper
1 bay leaf
4-6 duck or snow goose breasts
stir and blend everything well
cover and soak 24 hrs in frig
lightly season breasts with garlic salt & blk pepper
smoke about an hour @ 225 degrees use fav wood-apple, etc.
check. med- rare depending how you like it.
cool for 10 mins. slice thin.
