I ditto the PS Seasoning. Have made a 12.5 lb batch twice and they turned out great. I stuffed most into hog casings but also left some loose for using in spaghetti. Also browned up some of the stuffed ones and then sliced up and put in spaghetti. They are great grilled and then on a toasted hoagie roll with real mayo, sauteed mushrooms/peppers/onions, and provolone! Some marinara over the top never hurt anything either. Be sure and use enough pork in with your venny trim so they are not too dry.
