Catfish are a funny thing. Channel cats that is. Some are good, some are great, and some are terrible. For eaters I keep them around 16 to 22 inches. The colder the water the better they usually are. But not always. I don't know why there is a difference in them. I bleed every one of them and put them on ice as soon as possible. The warmer the water, I keep those for the smoker. I fish them from Lower Wisconsin up to the Petenwell Dam. Don't really notice a difference in them from any stretch of the river. Sometimes you win, sometimes not so much. Still fun to catch. And I still love to eat them.
The Walleyes taste pretty good out of Lake Wisconsin. I like to bleed them which will always make them even better.
The Crappies are excellent also, as are the Blugills . Can't really say the same for the Sauger. Not crazy about them . They just don't taste that great to me compared to the others,so I don't keep them from here anymore. Not sure why the difference.
White bass are always lots of fun to catch. But I don't much care for them, regardless of what lake they come from, or what I do to try and improve taste. I don't keep. I also think these warm mid summer water temps can also affect taste on any fish, but I not catching much this time of year anyway.

Three weeks ago I caught one 19inch walleye, one 17inch souger and one very nice white bass 15inch below the Prairie Du Sac dam hoping for a good dinner. Unfortunately, all these fish had an unpleasant muddy taste after frying. I've never eaten fish from Lake Wisconsin. It's the same water but maybe the fish from this lake tastes different? Maybe someone will answer what fish caught in Lake Wisconsin taste like.
White bass aren't bad. Just take a few steps this time of year. Get them on ice right away don't let them die in livewell. This goes for all fish cut right behind the bottom of the chin where there is skinny piece connecting bottom of head. This bleeds them out and gives you a nice white fillet. White bass have a dark red streak they runs down middle of fillet. Cut this out.
