Comment on Eating Rough Fish.
We eat with our eyes, nose, mood and taste. It's for the reason restaurants like to dress things up!
Having said that, I prefer Walleyes, Perch and Northerns. 

However, we had an informal group at the Paper Mill I worked at and our goal was to eat WHATEVER one and other brought in (within reason) . Once everyone tried it, the source was revealed. More than once I was pleasantly surprised with Fried Sheep Head, White Bass, Lawyers, Catfish and White Perch! 
They were great breaded and fried.
It's really all in our head! And I must admit, I only keep Walleyes, Perch and Northerns.
Guilty as charged.

White Perch, everybody has there own taste. I have had both white perch and white bass along with multiple other species and they are not for me but they were not "bad". just a little softer than I prefer and not quite as tasty as a yellow, bluegill or eye. I have friends that cant tell the difference from carp or walleye if you dint tell them lol. The white perch we caught ranged from 2" up to 14". Could have filleted about half. If they are bad for the eco system maybe we could donate them? I have know ides to whom or where but I have seen them for sale in stores. Just a thought. Good Luck To All!      FishScale

The white perch i caught were all tiny. Too small to fillet, except one. I kept it. Gulls and pelicans like them. Probably threw back 20 or so.

Eerieeyes, " Don't knock it til U've tried it." I've had Sheepshead fried, baked, smoked & grilled. EXCELLENT fare either way!

Fished oconto today. Mixed bag but had 3 white perch. Considered a junk fish like sheepshead. Some eat sheepshead and I’m sure some eat white perch. Just not for me

I have been on the bay ,out of Oconto, several times this past month and haven’t seen a white perch. When I was in Maine recently ,for two years, they would catch yellow perch and kill them for the seagulls but keep white perch all day long.

The white perch are devastating the walleye population in the bay. They showed up in 2013 and are all over the Southern bay now. They feed on walleye eggs and make it very difficult to fish with harnesses. Google walleye populations in the bay. I fear if walleye are not stocked we won't have any at all. For me, they seem to hang closer to the bottom so I  try to run baits higher.Good luck.

We've caught white perch out of oconto,  usually fairly deep in late summer,  I did take some home and fried them up and they were very good

You may not get a ton of meat but certainly worth trying, IMO.
