Snack Sticks

I'm going to be making my first batch of snack sticks with venison scraps over the holiday weekend. Unfortunately I don't have a smoker and it's forecasted to be cold so I don't trust using my gas grill with wood chips. I'm hoping to add some liquid smoke to the recipe and bake them in the oven. Has anyone else on here ever done this? If so, please share experiences and any tips. Thanks in advance!

I must be in the wrong part of the state. I contacted three different places and none of them will custom smoke for customers. I did see on LEM's website that they now have a smoke flavored plastic casing. Only one review on the site but it was promising. Might try that or go back to using liquid smoke. Everything is still up in the air.

Why not make them however you'd like and take them in to have smoked? I've had mine smoked at a couple different meat markets in Waukesha co for right around $1/lb. Personally I think real smoke is far better than liquid smoke.
