Hot red pickled deer sausage Bahama Mamas

Found a few rolls of summer sausage and figured I'd make room for fresh plus friend gave me one that had no flavor . Gallon jar, simmered 7  cups white vinegar .Cup or more hot sauce, lg onion , salt , crushed red pepper flakes and minced garlic.You can add red food coloring for color. I used 4 summer sausage rolls cut in 1/2" chunks .Put chunks and onion in jar, pour mixture over it and store in fridge. Shake jar everyday for at least a week straight.
