Not your Mother's Meatloaf (not smoked)

The best meatloaf I have ever made and eaten (just finished leftovers this morning for breakfast):

2T butter

1 small onion, diced

1C red bell pepper diced

1 clove garlic, minced

1-1/4lb ground beef

1-1/4C Italian bread crumbs

2oz grated parmesan cheese (not powdered Kraft, real grated)

1/2C plain yogurt

1 egg, beaten

1/4C ketchup

2T Worcestershire

8-14oz fresh squeaky cheese curds (more the better)

1t salt

1tsp black pepper

In nonstick skillet, melt butter and saute onions, red pepper and garlic 5-6 minutes till soft.  Remove from heat and set aside.

In Large bowl combine all ingredients, mix by hand (latex gloves recommended) till combined.

Distribute mixture into loaf pan(s).  I use two smaller ones, could use one larger one.

Bake at 350F for 1 hour, drain fat and let sit for 5 minutes before cut and serve.

Note:  Make sure the cheese curds against the pan wall get that carmelized crunch on the outer surface.  Again, I add actually 12-14 oz of curds...makes me live up to my handle.  This recipe is so easy and can handle a lot of modifications without negative effects.  I sometimes add lot of green tobasco to the final product for a some zip.  One of my favorites.

My favorite part of meatloaf is the crunchy stuff, so I thought to myself why not make more of the crunchy stuff.  Take the recipe and instead of putting it in a loaf pan put it on a cookie sheet with low sides to it, then its only about an inch thick when you cook it.  Cooking time is less but the flavor is dynamite.

Only 1/4 lb of beer seem light.  How much does this server?  It looks awesome.  I am going to make it with venison!

Im thinking of trying it with jalapeños instead of red bell.  Maybe even habaneros...

Like i said, you can make some pretty significant mods without ruining it.

The curds are the bomb for me...

This is an excellent base recipe 12 Pack - thank you for posting.  

I’ve made it a couple of times and tweaked it to my families’ preferences.  

The flavor in your base recipe is spot on, however my kids don’t care for red bell peppers, so I replaced them with diced tomatoes.  

I also prefer it less creamy, so I left out the plain yogurt, and replaced it with more breadcrumbs and Parmesan. 

My kids love tomatoes, so I placed some on top with additional ketchup before putting it in the oven.

Made a double batch - one minus onions and peppers for my youngest. 

Just put it in the oven, we’ll see how it turned out in about an hour.

Oh I'm all over this!  The one modification that I've made to meatloaf, other than smoking it, has been to add black olives.  I'll probably carry that over here too.

Glad you liked it.  I've been known to eat it in 2 sittings (wife gets 2 servings, I eat the rest...)
