I have some inland brown trout im goin to be making.  I found a couple recipes for grilling them online.  Just putting this out there to see if anyone has a sure fire recipe since it will be my first time cooking trout.

I have become fond of filet-remove the pin bones (slice on each side of-lose a small amount of meat), then bread in 1/3 c parm cheese, 1/3 bread crumbs, 1/3 corn meal, fry in butter, flip once.  Really good.

Used to gut and grill, then flake meat off.  Good also.

Tinfoil is your friend. They dry out very easily over open heat. I've been told using a wood plank helps with that. I don't really have a recipe for ya, haven't had the best luck myself. I stopped keeping them for that reason lol. They are delicious smoked if you can catch enough to make it worth it!
