I have a Savage Stevens in 20 gauge I bought for sporting clays . About 525.00 . 12 gauge is starting to mess my shoulder.  Overall a nice gun for the money  .

IMO, the best bang for your buck on a used O/U would be an Ithaca (crafted by SKB) model # 500 or 600 !

I think feel and fit are more important than anything. I shoot sporting clays a few times a year and use my o/u for pheasant hunting. I don't practice and or take it too seriously but shoot against others who do. They shoot much higher grade guns than my Mossburg that I won in a raffle but it works for me. I will say when you shoulder some higher end guns the feel and balance is outstanding compared to mine but cost being 3-5x more has to be measured by the buyer and how serious you are.

I have 2 tri stars, a 12. And a 20. Both shoot well, and are worth exactly what I paid for them. I shoot clays 1 or 2 times a year, and use them for small game. I don't worry about scratches, I don't worry about cleaning, I just shoot.
