Whats For Dinner?

Thought it might be fun to see what everyone likes to eat. What are you're favorite foods? (other than fish and wild game). One of my all time fav's is Corned beef and cabbage, with red potatoes. MMMMM, got a huge pot with 2 shanks on right now, almost done! My second Fav is Veal Oscar, with white asparagus spears, crab, and hollendaise.

Poor mans brisket (Chuck roast) in the pellet grill. 225 started at 0550 this morning, just about done.
Homemade BBQ sauce.

I think I'll have chop suey delivered to me today along with some shrimp egg foo Yung and a couple of  shrimp egg rolls around 2 PM.

Just a little guy for me and the fam today. Adding a smoke tube for 5 hours to see how much it affects the final flavor.

​After the ​3 hours.

This recipe works great for the front quarter shanks too. I don't like grinding all those tendons and silver skin into my hamburger so we started doing all our shanks this way.

The1&0 ​- absolutely! ​Smoker/grill for 2 hours, well actually turned into 3, then off to the crockpot. 

​Venison is too lean to smoke ​fully on the grill. Most meats take on their maximum amount of smoke within the first 2 hours of smoking. Smoke first then finish in the crockpot to get the benefits of the smoke but moistness of a crockpot! Also works ​for pulled pork if you don't care about the bark. I prefer bark so I go full time on the grill without wrapping for pulled pork.

Hind end venison shanks brined 24 hours, heading to the smoker for 2 hours then finishing in the crockpot. Will post the final product later!
