Fried Perch Recipe

I have a freezer bag full of perch fillets that I want to fry up but I would like to try something else besides store bought coatings. If anyone would like to share a good go to recipe that would be fantastic! Thanks everybody! Tight lines!

I do s+p'd flour, then egg wash (3/4C per egg), and plain bread crumbs seasoned pretty heavily with original Mrs dash and some salt. Fry at 375 for just over a min, sometimes two.

My favorite, guide prepared shore lunch in Canada. Finely crushed saltine crackers Sweet and condensed milk egg mix the egg and milk Dip in the fish Roll in crackers Enjoy!

simple flour into egg into finely crushed salt and peppered corn flakes.

if you like a little kick in your batter, try Zatarains. its made in New Orleans and is available in most stores. Excellent on chicken too.

i don't measure any of this but i use flour, crushed up crackers of some sort(usually ritz or saltine), some bread crumbs, and the key to it....instant tater flakes. season to taste.

Mix equal portions of McCormick or Fry-Crisp Seafood breading with saltine crackers ground up in a blender. Add lemon pepper, salt or Lawerys seasoned Salt to taste, Dip in a 50/50 egg and milk mix, bread in a shaker bowl and deep fry at 350 until fillets just float. Light and crisp breading that doesn't soak up much oil.

I know you said no store bought, but Leiney's Summer Shandy used with Shore Lunch beer batter deep fried is hard to beat.

Use a good beer, I prefer a dark one, flour, garlic powder, black pepper and some Lawry's seasoning salt to create your own beer batter. Add flour and beer to get a consistency that will stick to the fish but not be too clumpy. The rest of the stuff is added to taste. Fry in a thin layer of peanut oil. Did up some baby portabellas and grouse breast chunks last night for dinner with it.

The breading I like the best is just plain Progresso bread crumbs. I beat a couple eggs with some milk, and in a gallon zip lock bag I put a few cups of plain Progresso bread crumbs with a couple tspns of salt. Dip the fish in the egg and throw in the bag and shake it up and deep fry. Nice crispy crunch without too much grease. The Italian bread crumbs make a very nice mixture as well.
