Oven Venison Jerky

Ingredients:

  • 1 pound venison
  • 1/2 cup soy sauce
  • 1/3 cup lime juice
  • 1 tsp. cayenne pepper [red]
  • 3/4 tsp. salt
  • 1 tsp. sugar
  • `1/2 tsp. liquid smoke

Directions:

Slice venison thin.Mix ingredients in large bowl.Add meat then transfer to zip lock bag. Marinate overnight longer for thicker slices. Place on oven rack and at 200 until dry but not brittle. About 2 to 3 hours. You might want to cover lower rack with foil for easy clean up.
