I recently canned some duck, wonder if others have and what seasoning you found good in it?

Thanks, but I skipped the soy as I thought too much salt. Certainly a good smell in the kitchen!!

I do it all the time using a pressure canner . We usually just use a chicken broth so as not to have any other flavor when we use the duck in recipes . We always cube the meat and pressure can it raw . It cooks and tenderizes beautifully . I usually make a wild duck gumbo , YES !

How much garlic or soy? I don't want to overpower the duck. Powder or clove? Gonna do some tonight, hope it turns out.

wife uses fresh garlic and soy sauce when she cans duck or goose. Tounge Out
