wood duck recipies

I just tried a new woodduck recipe and it was great and I didn't even use bacon! Woodduck Sliders One breast per slider. Breasts soaked in a brine for 24 hours. Season breasts with salt, pepper and seseme seeds. Pan fry in a hot pan to medium rare. Slice breasts into thin stripes and place on bun. Top with Asian Salad mix with seseme dressing from Wal-Mart and a slice of tomatoe. How do you guys like to cook your duck?

I haven't duck hunted in years. I really miss it and the good food that came from it. My favorite wood duck recipe was marinade the breasts in teriyaki, wrap with a strip of bacon and slow roast them with indirect heat on the charcoal grill. I would surround a small pan of water with the coals and place the breasts over the water pan. If you go direct heat, they'd dry out too much for my liking.

I usually just pan fry the breast in butter and garlic to medium.
