2 lb venison

1/4 Large white onion diced

5 cloves garlic mashed

1 tbls cumin

2 tsp dried parsley

1 tsp marjoram

1 tsp rosemary

1 tsp kosher salt

1 tsp coarse black pepper

1 tsp oregano

mix and grind coarse, then grind medium or coarse again, then fine grind

add and mix in 1tbls dried parsley  1 tsp coarse black pepper  1 tsp crushed rosemary

1 tsp oregano       do not grind again

bake in a bread loaf pan 45 min 350* degrees or till 165 internal temp. let it cool and take it out of the loaf pan and wrap in plastic wrap. refrigerate 6 hours.

slice and fry slices 1 minute each side

Tzatziki Sauce  1 cup yogurt  1 cucumber grated  1 tbls dill  1 tbls olive oil  1 tsp lemon juice  1 tsp wine vinegar  1 tsp black pepper 1/2 tsp kosher salt
