i pickled a heart and tounge from a 1400 pound black angus steer had it for sturgeon spearing on bago we always party after the 12:30 shut-off and it was all gone on day 1 next day they were asking for more the 3rd. day i took ground round and 3# they ate up with 2 loaves of rye bread good stuff

I also remember my mother boiling it until tender with onions then skining and slicing it. A little vinegar sprinkled on it made taste great. I now use it in bean or vegitable soups. Just wash, boil till tender with other soup meat and cut up into small chunks. Add back into soup.

Mom made it. She boiled the tongue in water, for several hours, then let cool and skin. Sliced it thin and put it in a gravy with gingersnaps and raisons. Served it with mashed potatoes, to die for. the tongue has a very sweet taste.

If you want a real treat, try a blood & tongue sausage sandwich! It is even better than head cheese.

Grandma used to pickle tongue and heart, which was to die for. She has been gone for 25 years and so is her recipe.

Try deer tongue, it is easy to cut them out from a fresh kill and if you get your buddys to help out it can be a great way of getting meat that usually gets thrown out. Makes very good pickled meat for snacking. (like corned beef but very lean)

Have you never had Tacos de Lengua? My favorite Mexican Restaurant in Green Bay serves them. I may be a Gringo but I loves me Tacos de Lengua!
