crappie cooking tips?

hey all. I need some help. how should i cook them/ anyone have good recipies? I batter and deep fry my gills or pan fry in butter. I have never cooked a crappie. I dont want to cover the flavor of the crappies and i am wondering what y'all like best. thanks, tight lines.

Place thinly sliced onions and crappie ieces in tinfoil wit garlic powder, black pepper, butter, and some "italion seasoning". Fold the tinfoil so it makes a sealed pouch. Place on the grill slightly off the heat and cook till the fish is white and firm. Dont let the butter burn. Delicious!

Dredge them with "Fryin' Magic" from Little Crow Foods, then deep fry the filets in canola oil. Good flavor that enhances the crappie without overpowering their delicate flavor. Excellent

Bread them in Hungry Jack buttermilk pancake powder. Just dip in milk and then roll in the pancake powder and cook them in a fry pan with just a touch of oil. Turns out perfect every time and you really taste the crappie.

that idea "over cook them" sounds like a winner. i like that train of thought, firm it up. I never considered baking, gonna try it this week.

I just made a batch of crappies that was great. I used Bakin' Miracle, added a little curry powder and garlic and breaded the fillets. Spread about 2 tbs of olive oil on a cookie sheet and baked them at 450. I flipped them half way through using hamburger flippers and they turned out perfect. Firm and crisp.

The one piece of advice I think is key, is to "over cook" them. Cook them to a point that any other fish would be over cooked and dry. Crappies are soft and cooking them to a deep golden will help firm them up. If you pan fry, flip gently, one time only. I like a 50/50 mix of Shore Lunch and Italian bread crumbs.
