Fine to use Bear Meat, just freeze it for at least 30 days. I used same spices i would for venison, I just use real lean beef trim instead of pork - bear meat is greasy enough.
Dont know the recipe but I had slim jims made with my bear this year so you should be good to go if you can find a recipe,also please post it if you find one.
Im no food saftey expert but I don't think I'd mess with that.
I prefer to eat bear done, and hot.. Roasts in the crock pot, ground in sphagetti, BBQ meatballs or whatever.
